What is raw honey?
Raw honey is natural honey that has not been pasteurized to increase its shelf life. Most honey purchased in stores is pasteurized. While not harmful, the pasteurization process prolongs the time it takes for honey to granulate. This is why much of the commercial, store honey can come in from China, Argentina, Mexico or other countries and still be liquid many months later. It is not needed to sterilize the honey, just to make it look more saleable many months after production. Unfortunately, in the process of pasteurization, most of the beneficial nutrients, vitamins, and other healthy components of honey are driven off, much like boiling vegetables for hours. You still have honey, but it won’t have the taste of pure, raw honey and all its beneficial ingredients.
Won’t my honey granulate or go bad if it isn’t pasteurized?
Pure honey never goes bad. Most of the old-time medicine poultices had honey as their base ingredient as honey will not support bacterial growth. They have discovered honey in Egyptian tombs that was still edible! All honey granulates over time. The granulation process can be slowed though by keeping it at a warm, stable temperature; refrigerating it will quickly accelerate the process. If it becomes too granulated to use, simple place the jar in a bowl of warm water.
How do you keep it pure?
There are a number of things that we are attentive to at Sun Mountain Apiaries. The flowers in the hayfields, meadows, brush rows and woods (bees love basswood!) in the area are like old fashioned farmland. We like the fact our bees do not have the exposure to the chemicals, herbicides and pesticides found in many suburban areas and industrial type farming operations.
We also keep our operation and processing equipment clean and spotless. Our honey is mechanically filtered the old-fashioned way to remove bits of wax, the occasional bee or other particles, but we make sure no flavor is removed! We also use only glass jars to preserve that delicate, unique flavor and avoid any off-flavors from plastic. It also helps the environment as glass is both recyclable and can be sterilized.

Comb honey is honey exactly as the bees made it, untouched by human hands. Considered to be the most flavorful of honey, it is honey that the bees sealed in their natural wax comb. The wax is 100% natural from the bees and completely edible. It is the basis of many cosmetics (ex. Lip balm) and in years gone by was chewed much like gum today. Try some comb honey and you will be hooked! Best when paired with other food.

We have sold out of honey by late spring every year for the past five years. Our strong sales coupled with the fact we only bottle our honey in glass jars prevents us from shipping our honey. All products are available for purchase and pick-up at our store.

Today's Bee Fact: Did you know Ukraine was historically the third largest honey producer in the world behind only China and Argentina? There are virtually no corporate beekeepers and instead nearly 400,000 independent beekeepers harvest their average 76,000 tons of honey per year (much of it sunflower as you would guess). Beekeeping is deeply ingrained in their culture to a degree unknown here in the US. The bulk of their honey production is based in eastern Ukraine around the Donbas Region. They were the top supplier to the EU and in the top 10 importers to the US. Unfortunately, the war has taken a terrible toll. While exact numbers are hard to come by, it is estimated that over 50% of these beekeepers have joined the service to help defend their country. Those with hives outside of the war zone may have their hives survive albeit without honey production. Many in the east though have been destroyed by fire, bombing and actual targeted destruction by the Russians. They are no longer able to meet the EU's demand for honey with production cratering. War is horrible under any circumstances and impacts so many facets of life like this that we can't even conceive the impacts. There is some good news in that war can often also bring out the best of some when tested. The Brotherhood of Ukrainian Beekeepers has launched the "Help on Bee Wings" program. It helps beekeepers restore their apiaries if needed, supports the families of beekeepers who are fighting in the war, and will provide humanitarian supplies (ex. first aid kits) to the soldiers fighting.
